Broiled Barracuda Broiled Barracuda Fillets1 ˝ lbs. Barracuda fillets 2 tbsp. dry white wine 3 tbsp. soy sauce 1 tbsp. garlic chopped 2 tbsp. fresh basil chopped 1 tbsp. fresh parsley, choppedIn a small sauce pan boil the soy sauce, wine and garlic for 2 to 3 minutes to thicken. Place the barracuda on a well greased baking sheet. Using a pastry brush, brushthe barracuda with sauce mixture. Broil for 4 minutes, brush the barracuda again and broil for a few more minutes. Top the barracuda with fresh herbs and serve. Serves 4 to 6.
