2 cups cooked firm albacore tuna     2 tbsp. extra virgin olive oil
½ cup vinegar      ½ small onion, thinly sliced
2 cloves garlic, thinly sliced    ¼ tsp. crushed black pepper
1 bay leaf, broken in 2 to 3 pieces   ½ tsp. salt 
1 small dried chile broken in 2 or 3 pieces  water

•Break albacore into bite size chunks and place in deep glass bowl. Add
oil, vinegar, onion, garlic, pepper, bay leaf, salt and chile to bowl and
mix with albacore. Add enough water just to cover albacore.  Cover and refrigerate over night.  Makes 8 servings.
