Ceviche Pescado Ceviche Pescado Raw fish (sea bass, red snapper, etc.) (Never use fresh water fish!) Cilantro Lemon Garlic Tomato
Squeeze 1 1/2 cups pure lemon juice in a glass or natural ceramic bowl (plastic or metal is not recommended). Chop up the raw, uncooked fish into small bite- size pieces. Place in bowl. Add small amount of diced up garlic, small amount of small, chopped up tomato and generous amount of cilantro. Let stand at room temperature or place in refrigerator (but not too cold).
