Smoked Fish Dip                                                                                               Smoked Fish Dip

1 cup minced or chipped smoked fish
1 brick softened cream cheese
1/2 cup shopped sweet onions
Mix all ingredients together with a fork and serve on crackers
 
 
Brine for Smoking Fish

2 quarts ice water
1/2 cup pickling salt
1 cup brown sugar
2 tablespoons black pepper
3 crushed bay leaves
soak fish for 10 hours or more before smoking
