1 pound lingcod fillets 1 clove of garlic, minced or pressed 2 tsp. melted butter or oil 1 tsp. lemon zest ¼ cup grated parmesan cheese ¼ tsp. salt and pepper ½ cup chopped parsley parsley sprigs 1 cup dried bread crumbs lemon wedges
• Mix together bread crumbs, parsley, salt, garlic, pepper, parmesan cheese, and lemon zest. Rinse fillets gently and pat dry. Rub lingcod fillets with butter or oil and dip each side in bread crumb mixture. Bake at 325 degrees for 15 to 20 minutes (uncovered) and check for doneness. Garnish with parsley sprigs and lemon wedges. Serves 4.
